Raw Vegan Chocolate and Raspberry Birthday Cake

Yesterday was my 20th birthday! Yay!..or not?! I'm getting old and it's not a nice feeling. Anyway let's see the bright side. I had a wonderful day and I made my own birthday cake! It was absolutely delicious! And the great thing was that I received an amazing gift from my parents, something I wanted so much...a wonderful Nikon D90 camera! I love it!

About the recipe..oh..I would love to share with you all this lovely cake! Hope you'll try this recipe and let me know if you liked it. Have a great "chocolately" day!

Question: What is your favorite ingredient that you love to combine with chocolate?

Aromatherapy and its great health benefits

Essential oils have so amazing properties! I love using them in body/face creams and in homemade perfumes. Be careful though because they may be toxic if used in the wrong amounts. Always read the instructions on each bottle and if you have some chronic diseases, ask you doctor before starting an essential oil treatment. Also, essential oils are not recommended for pregnant women. I gathered some info for you about aromatherapy, hope it helps!

Mashed Butter Beans with Tomato Sauce

This is an easy recipe that can be used as a side, appetizer or even a main dish. Because this recipe is high in fibers and low in fat and sodium, it is recommended for those of you who are on a diet trying to lose weight.

What I like most about this recipe is that it is also very versatile; you can add a carrot instead of celery, which will give the beans a beautiful orange color or you can change the sauce, for example tahini paste will be delicious if served on top of these mashed beans. Feel free to try an combination you like.

Raw Vegan Cranberry Brownie

I love desserts and because I often eat sweets, I prefer them raw. We all know that all sweets are high in calories, but making mostly raw desserts makes me feel good and guilt-free; this way I know I get plenty of vitamins, minerals and other great nutrients and so I ignore the calories.

Another thing I love about raw desserts is that they’re so easy to make! This took me less than 5 minutes, excluding the time required for soaking and freezing.
Question: Do you know other brownie recipes that are healthy and gluten-free?

Asian “Chicken” Stir Fry

This is the perfect meal if you want to fool a meat eater into believing that what he eats is chicken. This happened to my boyfriend and he realized he’s not eating chicken only when he saw that I was eating too.

You’ll love the soy texture and the spicy aromas. This recipe is easy, fast and healthy. Let me know if the trick worked for you as well.

Black Bean Veggie Nuggets

I am constantly trying to make my bf give up meat and what is a better way than cooking some meat-like, fast food looking, healthy meals. He loved this recipe! And I mean LOVED! It resembles the traditional Romanian meat nuggets recipe which honestly is delicious but really unhealthy. I used a very small amount of oil, gluten free flour and black beans which are a lot better than the white ones because they contain more fibers and have an impressive amount of antioxidants.

By the way, these nuggets can be easily transformed in burger patties.

I really hope you’ll like this recipe. It is simple and delicious!

Vegan Bolognese Spaghetti

I love Italian food, especially pasta! This is the well known Bolognese Pasta recipe turned vegan. The texture and taste are almost the same as in the original recipe, which is a great thing! Even better, I used gluten free spaghetti.

Hope you'll like it!

Poll Closed!

The poll is now closed and the results are 11 votes "Yes!" and 1 "No.".

I started adding the nutrition info for each recipe and I hope it helps. In my opinion counting calories is no good, but I think it's ok to have an overall idea. Why do I have this opinion about counting calories? Well, I think it's stressful and as you know stress disturbs your body's energies and your equilibrium. You should eat small servings of healthy meals and you'll see that you won't need to worry about calories; a handful of raw nuts a day won't get you fat trust me and we all know that are high in calories but who cares as long as they're so healthy!
Have a great day everyone!

Spoiler: Tomorrow I'll post a delicious "Bolognese" Pasta recipe that even your carnivorous friends won't believe it's meat-free!

Do you really know what you eat?

One of the basic rules when you decide to start a healthy lifestyle is to know what you eat. You have to learn about what you have to avoid and also what is good for your health. In our days it is very difficult to eat 100% healthy because as you all know even some vegetables and fruits may be dangerous for our health considering the large amount of pesticides that are being used. What we can do is to learn how to avoid this, how to choose right and ALWAYS read the ingredients.

Now, I'm sure that you have heard about E numbers which are food additives. You'll have to remember some because most of them can be a real threat to your health. What you'll need to know is the really bad ones; I did some research and made a list for you. Hope it will help!

Autumn in a plate - Oven Roasted Vegetables

I love roasted vegetables; so easy to make, so simple and yet so delicious. Of course raw vegetables are a lot healthier than cooked ones but sometimes you just need a hot meal right?! Anyway this dish is very healthy, low in calories, low in fat and also low in sodium, diet friendly and it is very filling too.

Did you know that unlike other fruits and vegetables, where nutritional content such as vitamin C is diminished upon cooking, processing of tomatoes increases the concentration of bioavailable lycopene. Lycopene in tomato paste is four times more bioavailable than in fresh tomatoes. For this reason, tomato sauce is a preferable source as opposed to raw tomatoes. If you don't know, lycopene is a powerful antioxidant and it has been considered a potential agent for prevention of some types of cancers.

Another great thing about this recipe is the combination of tastes and textures: sweet and salty, crunchy and soft...amazing! I also love the colors; the potatoes look like they were painted! It’s like having autumn in a plate!

Try it!

Crepe Rolls with Chocolate Cream, Chestnut Puree and Plum Jam

It’s been a while since the last time I had crepe rolls for dessert. Jam filled crepes were my favorite when I was little but as you know they’re a bit fattening so now I rarely eat them. In my opinion there is nothing wrong to indulge yourself with some delicacies once in a while, so yesterday I made these delicious crepes – my healthier version.
The great thing about it is that you can use any filling you like. I used homemade chocolate cream, chestnut puree and plum jam. All these fillings are very healthy and sugar-free.
Hope you’ll like this recipe.
